做法(fǎ ):洗净宰好鲫鱼,洗(xǐ )净淮山和薏(yì )米。用清水把陈皮泡软(ruǎn ),拍裂一小块姜(jiāng ),热锅(guō ),用(yòng )姜块在(zài )锅上(shàng )擦一遍,放(fàng )两勺油(yóu ),待油六成热下鱼,煎至微黄。煮(zhǔ )沸瓦(wǎ )煲里的清水,放入煎煮好的鲫鱼和其他材料,武火煮(zhǔ )沸,转中小火煲(bāo )一个半小时,下盐调味即可品尝。 -
