做(zuò )法:洗净宰好鲫鱼,洗净淮(huái )山和薏米(mǐ )。用(yòng )清水把陈(chén )皮泡软(ruǎn ),拍裂一(yī )小块姜,热锅(guō ),用(yòng )姜块在锅上擦(cā )一遍,放两勺油,待油六成热(rè )下鱼,煎至微黄。煮沸瓦煲里的清水(shuǐ ),放入煎煮(zhǔ )好的鲫鱼和其他材料,武火煮沸,转中(zhōng )小(xiǎo )火煲一(yī )个半小时,下(xià )盐调味即可品(pǐn )尝。 -
