做(zuò )法:春笋切成片后加少许盐(yán )捞出(chū )后用清水浸泡(pào ),生姜切片,葱切成段。锅烧(shāo )热,倒入2勺(sháo )油,放入生姜、春笋、牛肉片、葱段翻炒1分钟左右。再加入生抽(chōu )、老抽、蚝油翻炒均匀,加入少(shǎo )量清水半(bàn )掩住(zhù )春笋,盖上(shàng )锅盖(gài )大火煮开后转中火。煮到水快熬干的时候(hòu )加入盐,翻(fān )炒均匀稍收(shōu )汁时盖上锅盖焖(mèn )。 -
