做法(fǎ ):洗净(jìng )宰好鲫(jì )鱼,洗(xǐ )净淮山和薏米。用清水把陈(chén )皮泡软,拍裂一(yī )小块姜,热锅,用(yòng )姜块在锅上擦一遍,放两勺(sháo )油,待油六成热下(xià )鱼,煎至微黄。煮沸瓦煲里的清水(shuǐ ),放入煎煮好(hǎo )的鲫鱼和其他(tā )材料,武火煮(zhǔ )沸,转中小火(huǒ )煲(bāo )一个半小时(shí ),下盐调味即可品(pǐn )尝。 -
