做(zuò )法:洗净宰(zǎi )好鲫鱼(yú ),洗(xǐ )净淮山和薏米。用清水把陈皮泡软,拍裂(liè )一(yī )小块姜,热(rè )锅,用(yòng )姜块在(zài )锅上擦一(yī )遍,放(fàng )两勺油(yóu ),待油六成热下(xià )鱼(yú ),煎至微黄。煮沸瓦煲里的清水(shuǐ ),放入煎煮好的鲫鱼(yú )和其他材(cái )料,武火煮沸,转中小火(huǒ )煲一个半小时,下盐调味即可品尝。 -
