做法:洗(xǐ )净宰(zǎi )好鲫鱼(yú ),洗(xǐ )净淮(huái )山和薏(yì )米。用清水(shuǐ )把陈皮泡软,拍裂一小块姜,热(rè )锅,用姜块在锅(guō )上擦一遍,放(fàng )两勺(sháo )油,待(dài )油六成热下鱼,煎至微黄。煮沸瓦煲(bāo )里的清水,放入煎煮好的鲫(jì )鱼和其他材料(liào ),武火煮沸,转(zhuǎn )中小火煲一个半小时,下盐调味即可品尝。 -
