做法:洗净宰好鲫鱼,洗(xǐ )净淮山和薏米。用清水把(bǎ )陈(chén )皮泡软(ruǎn ),拍裂(liè )一小块姜(jiāng ),热锅(guō ),用姜块在锅上(shàng )擦一(yī )遍,放两勺(sháo )油,待油六成热(rè )下鱼,煎至微黄。煮沸瓦煲(bāo )里的清水,放(fàng )入煎煮好的鲫鱼和其他材料,武火煮沸,转(zhuǎn )中小火煲一个半(bàn )小时(shí ),下盐调味即可品尝。 -
