做(zuò )法(fǎ ):春笋切成片后加少许盐捞出后用清(qīng )水(shuǐ )浸(jìn )泡,生姜切片,葱切(qiē )成段。锅烧热,倒入(rù )2勺油,放入(rù )生姜、春笋、牛肉片、葱段翻炒(chǎo )1分钟左右。再加(jiā )入生(shēng )抽、老抽(chōu )、蚝油翻炒均匀(yún ),加入少量清水(shuǐ )半掩(yǎn )住春笋,盖上锅盖(gài )大火(huǒ )煮开后转中火。煮到水快熬干的时候加入盐,翻炒均匀稍收汁时盖上(shàng )锅(guō )盖焖。 -
