做(zuò )法(fǎ ):春笋切成片后加(jiā )少许盐捞出后用(yòng )清水浸泡,生姜切片,葱(cōng )切成段。锅烧(shāo )热,倒(dǎo )入2勺(sháo )油,放入生姜、春(chūn )笋、牛肉(ròu )片(piàn )、葱段翻炒1分钟左右。再加入生抽、老抽(chōu )、蚝油翻炒(chǎo )均匀,加(jiā )入少量(liàng )清水半掩住春笋(sǔn ),盖上(shàng )锅盖大火煮开后转中(zhōng )火。煮到水快熬干的时候加入盐,翻炒均匀稍收汁时盖上锅盖焖。 -
