做(zuò )法:洗(xǐ )净宰好鲫鱼,洗净淮山和薏米。用清水把陈皮泡软,拍裂(liè )一小块姜,热锅(guō ),用姜块在锅上(shàng )擦一遍,放(fàng )两勺(sháo )油,待油六成热下鱼,煎至微(wēi )黄。煮沸瓦煲里的清水(shuǐ ),放入煎(jiān )煮(zhǔ )好的鲫鱼(yú )和(hé )其他材(cái )料,武(wǔ )火煮沸,转中小火煲(bāo )一个半小时,下盐调味即可(kě )品尝。 -
