做(zuò )法:洗(xǐ )净宰好鲫鱼,洗净(jìng )淮山(shān )和(hé )薏米(mǐ )。用(yòng )清水把陈皮泡软,拍裂一小块姜,热(rè )锅,用(yòng )姜块在锅上(shàng )擦(cā )一遍,放两勺(sháo )油,待油六成热下鱼,煎至微黄。煮沸瓦煲里的清(qīng )水(shuǐ ),放入煎煮好的鲫(jì )鱼和(hé )其他材料,武火煮沸,转中小火煲一个半小时,下盐调味(wèi )即可品尝。 -
