做法:洗(xǐ )净宰(zǎi )好鲫鱼,洗净淮(huái )山和薏米。用清水把(bǎ )陈皮泡软,拍裂一(yī )小块姜(jiāng ),热锅,用姜块在锅上擦一遍(biàn ),放两勺(sháo )油,待油六成热下(xià )鱼,煎至微(wēi )黄。煮(zhǔ )沸瓦(wǎ )煲里的清水,放(fàng )入煎煮好(hǎo )的鲫鱼和其他材料(liào ),武火煮沸,转中小火煲(bāo )一个半小时,下盐调味即可品尝。 -
