做(zuò )法:洗净宰好鲫鱼,洗(xǐ )净淮(huái )山和薏(yì )米。用(yòng )清水(shuǐ )把陈皮泡软,拍裂一小(xiǎo )块姜,热锅,用(yòng )姜块在锅上擦一(yī )遍,放(fàng )两勺油,待(dài )油六成热下(xià )鱼,煎至微黄。煮沸瓦煲里的清水,放入煎煮好(hǎo )的鲫鱼和其他材(cái )料,武火煮沸,转中小火(huǒ )煲一个半小时(shí ),下盐调味即可(kě )品尝。 -
